Depending upon the time of year, I'll be offering different types of seafood based upon availablity.

Preparation with a purpose.

I take great care in processing my ingredients for your event. I always do my best to utilize organic produce and wild seafood. Any farm raised fish used has been extensively researched in order to ensure that it's the best quality possible. Although I don't normally advise purchasing farm raised seafood, there are certainly a number of exceptions. 


For example, I use farm raised Mount Cook Alpine Salmon from New Zealand. It's sustainably sourced from the glacial waters of New Zealand's Southern Alps. Although they're raised via aquaculture, the river is constantly supplied with some of the world's purest flowing water.


In regards to the farm itself, it was recently awarded "Best Choice" in sustainability by the Monterey Bay Aquarium Seafood Watch!


When I first moved out to Northern California over nine years ago, I worked in the seafood department of Whole Foods. This invaluable experience gave me an opportunity to gain a far more expansive knowledge of how to properly work with fish.

Handpicked & freshly steamed!

I get live Rock Crab from the local fisherman and steam them myself. I never use imitation crab meat for of my menus. In addition, I also procure live uni and delicately clean out the roe.
